We designed this special chef knife to incorporate the best features of French & Oriental knives. The French knife has light weight for easy handling and the Oriental knife has easy slicing, dicing & mincing. It is difficult to slice & dice with a normal French knife & the Oriental knife is too heavy.  Our knife is designed to combine the features of the french and oreintal knives.
